Cheat’s chicken & almond empanadas with salsa fresca

Tapas: Pan-fried squid with chilli, anchovy, parsley & rocket
We made this simple dish in a cookery lesson yesterday, it took about 12 minutes from start to finish, even including preparing the squid! As with many very simple dishes it’s important to use great ingredients. My fishmonger did me proud with the squid and I used good oil, fresh, wild rocket and excellent anchovies. more >

Tapas: Mussels with chilli & garlic butter and parsley breadcrumbs
Next in the tapas series, a recipe that when I tested I didn’t have high hopes for, but which turned out to be genius. Garlic + Seafood = Where Can You Go Wrong? Adding the chilli kick, a hint of lemon, the crunch of breadcrumbs and the freshness of parsley is just a few layers of loveliness on top. This is also a great little dish for entertaining as you can pre-cook and stuff the mussels several hours ahead of serving. more >

Pork belly, chorizo & butter beans
Here, I’ve updated an old GJ recipe for this sharing edition of our newsletter. Pork belly + chorizo + beans are found in many a tapas restaurant and is an excellent dish for summer eaten in small quantities with fresh bread and a glass of chilled sherry – Fino, Manzanilla, Amontillado, Oloroso, Palo Cortado - whatever your tipple of preference. A warm salad of peas, feta & lemon
A guest post from my friend Sarah… “I had a variation of this salad at Redhook, a gem of a seafood and steak restaurant in Farringdon. I chose it as an accompaniment to a juicy rib-eye steak, but this recipe is a great option to accompany a spring lunch, maybe a herby roasted chicken or a perfectly cooked pink leg of lamb. If you do make it to Redhook and sample one of their steaks, then the Cline ‘Cashmere’ 2008 is the perfect drop of red to wash it down with. more >

Review: Zin Sushi, Greenwich
I’ve just been to lunch at Zin on a recommendation from one of the waiters at an event we worked last night. It’s about 5 minutes walk from my house, I pass it every day, but have never been lured in as it’s not very smart, the windows are busy so you can’t see what lays inside, and I’ve never been very intrepid. more >
