Sea bass & scallops with Noilly Prat sauce, bacon crumbs & kale
Every week I teach in north London, with the students specifically looking to learn more about fish. Noilly Prat (like many dry white wines / fortified wines) and fish are made for each other, especially when using naturally sweet fish such as sea bass and seafood like scallops. more >

Posh shepherd’s pie
This was first developed as part of a St George’s Day Feast for my friend Sarah. We wanted to create dishes which played around with English classics, and so this Shepherd’s Pie, made using four hour roasted shoulder of lamb and beautiful potato galettes, was born. more >

Pumpkin, ginger & coriander fritters with lime yogurt
