Lumaconi with raw tomato, olives & fresh herbs
Lumaconi, or large snail shells, are excellent for this type of sauce, as the shells scoop up the flavours for you. The ‘sauce’ ingredients of sweet, baby pomodoro tomatoes, olives and frsh herbs can be chopped up in the time it takes the pasta to cook, and then simply tossed through for 30 seconds to warm. more >

Sugo di carne
This is a more interesting, and in my opinion more flavoursome, version of spaghetti Bolognese, still cooked with beef, but this time casserole-ing down chuck steak for 2 – 3 hours until you can literally shred it apart. The Italians have a similar version of the dish made with a wild boar ragu, but this beef version is more accessible via your local butcher! more >

Tagliatelle with walnut sauce
My parents have a walnut tree therefore I always have mountains of them at home, so I wanted to find a savoury dish to use them in. This walnut sauce for tagliatelle is a classic Italian pasta dish, very tasty, easy to make and provides an interesting crunchy texture. more >

Spaghetti alla vongole (Spaghetti with clams)
I first had this dish in a little restaurant in Camogli in Italy, a couple of towns up from Portofino. I then ate it around five more times that week, it’s just that good. It has minimal ingredients, as the salty clams provide so much flavour you barely need to do anything but cook them and toss them with the pasta. more >

Penne with gorgonzola, spinach & pine nuts
What a classic combination; rich, salty gorgonzola with crunchy pine nuts and irony spinach. This is a speedy pasta dish for a quick supper, serve it with a crisp green salad and fresh bread to mop up the cheesy sauce.

Pan-fried wild black bream with Thai basil & ginger ‘pesto’
My fishmonger did a wonderful job of up-selling me from my usual sea bream to this beautiful wild black bream that “was still swimming in the sea off Cornwall yesterday”. He did the right thing as we just cooked this up for lunch, dressing simply with a Thai basil & ginger ‘pesto’. You just have to cook this one! more >

Book Review: Bill Granger, Feed Me Now!
Bill Granger seems to have made the UK his second home, regularly doing the rounds of our cookery shows, but his books are purely inspired by his native Australia, with shiny, sunny recipes which make you smile, almost as wide as he does. Butterflied leg of lamb with warm anya potato salad & preserved lemon dressing
We asked the question yesterday, BBQ or roast, BBQ or roast?! The lovely Mr Earl suggested butterflied leg of lamb on the BBQ – and so this recipe was born. I’ve written this for kitchen cooking, as the English summer is so unreliable, but it can easily be transferred to the BBQ. more >
